• day old French or Italian bread

  • olive oil

  • dried herbs (you can use whatever you like here)

  • salt and pepper

  • garlic powder (or onion powder or none at all!)

Pre-heat oven to 350 F. Line a baking sheet with tin foil. Cut bread into cubes and place them in a medium bowl. Drizzle olive oil over cubes. Sprinkle with a dash of garlic powder, a little bit of basil, and some parsley, or Italian seasoning, or whatever seasonings you like. Toss and move the cubes to the baking sheet. Bake until golden brown, about 20 minutes.

Olive Garden Salad Dressing

Prepare Good Seasonings as per packet. Pour in medium bowl and add other ingredients starting w/Italian Seasoning.

Store in sealed container in fridge up to 4 weeks.

Give good shake before using.

1/2 tsp dried Italian seasoning

1/2 tsp salt

1/4 tsp black pepper

1/2 tsp sugar

1/4 tsp garlic powder

1/2 Tbsp mayo

1/4 cup olive oil

2 Tbsp white vinegar

1 1/2 Tbsp water


Spring Salad

2 hearts of romaine, tough outer leaves removed, roughly chopped

1 cup chopped fresh dill

4 scallions or green onions, white and tender green parts, chopped

1/2 cucumber, peeled, seeded, and thinly sliced

4 large radishes, trimmed, halved, adn thinly sliced

1/3 cup crumbled feta cheese

Juice and zest of 1 large lemon

Extra virgin olive oil

Salt and freshly ground black pepper

  1. In a large salad bowl, combine the lettuce, dill, scallions, cucumber, radishes, and feta. (May want to wait to put feta in til very end, so it doesn’t get crumbled up so much.)

  2. Place the lemon juice and zest in a glass jar with a tight-fitting lid. Add twice as much olive oil and salt and pepper to taste. Cover the jar and shake well. Pour the dressing over the salad and gently toss to combine. Serve immediately.


Macaroni Salad

Shell pasta

1 1/2 cup mayo

2 tsp sugar

1 tsp salt

1/2 tsp black pepper

1 tsp mustard

Also, any of the following:


sweet pepper



green onion


Potato Salad

6 medium potatoes – bring to boil, simmer 10-15 minutes, cool in refrigerator

1 cup mayo

1 Tblsp mustard

1/2 cup chopped dill pickles

1 cup chopped celery

3/4 tsp salt

1/2 tsp black pepper

3 sliced green onions

1 tsp sugar

2 hard boiled eggs

If using yogurt, omit the lemon juice. You may also want to add a little honey to balance the tartness of the yogurt.


  • 6 Tbsp mayonnaise (or plain yogurt)
  • 1 Tbsp lemon juice
  • 1/2 teaspoon salt
  • Pinch of freshly ground black pepper
  • 2 sweet apples, cored and chopped
  • 1 cup red seedless grapes, sliced in half (or 1/4 cup of raisins)
  • 1 cup celery, thinly sliced
  • 1 cup chopped, slightly toasted walnuts
  • Lettuce
  • Optional – cooked chicken pieces


In a medium sized bowl, whisk together the mayonnaise (or yogurt), lemon juice, salt and pepper. Stir in the apple, celery, grapes, and walnuts. Serve on a bed of fresh lettuce.


Apple Salad

4 apples with peeling on, cut up

Mix together:

3/4 cup miracle whip

Sugar to taste up to 1 Tablespoon


Add apples.
