Baked Omelet Roll

6 eggs

1 cup milk

1/2 cup flour

1/2 teaspoon salt

1/4 teaspoon pepper

1 cup shredded cheddar cheese

Preheat oven to 450 degrees F (230 degrees C). Lightly grease a 9×13 inch baking pan.

In a blender, combine eggs, milk, flour, salt and pepper; cover and process until smooth. Pour into prepared baking pan.

Bake in preheated oven until set, about 20 minutes. Sprinkle with cheese.

Carefully loosen edges of omelet from pan. Starting from the short edge of the pan, carefully roll up omelet. Place omelet seam side down on a serving plate and cut into 6 equal sized pieces.

Granola

5 1/2 cups oats

1 cups nuts

1/2 cup coconut

1/2 cup sesame/pumpkin seeds

1/2 cup sunflower seeds

3 Tblsp. brown sugar

1/2 tsp cinnamon

1/2 tsp salt

1/2 cup oil

1/2 cup honey

350° stirring every 10 minutes.

Can mix in some dried fruit after baking.

 

Pancakes

Mix together:1 cup milk

1 egg

2 Tblsp vegetable oil

Add:          1 cup flour

1 Tblsp sugar

1 tsp baking powder

1 tsp baking soda

¼ tsp salt

 

Classic Quiche Lorraine

4 large eggs

9 inch pie crust (frozen or refrigerated dough)

1 cup low-fat swiss cheese, shredded

1/3 cup chopped green onion

4 slices bacon, cooked and crumbled

1/4 cup heavy cream

1 1/4 cup 1% milk

1/4 teaspoon salt

1/4 teaspoon pepper

Other Options: Sun-dried tomatoes, basil, rosemary, fresh baby spinach coarsely chopped

  1. Preheat oven to 325°.

  2. Prepare pie crust by package instructions for pre-cooking or pre-baking.

  3. Cook bacon slices. Set aside.

  4. In a large bowl, combine eggs, heavy cream, and milk. Mix thoroughly.

  5. Combine shredded cheese, chopped onion, bacon, salt and pepper in a bowl.

  6. Add to egg mixture and mix well.

  7. Pour egg mixture into pie crust and bake for 40-50 minutes or until a toothpick inserted in the middle comes out clean.

 

Quick Quiche

From Allrecipes Magazine – November 2017

8 slices bacon

4 ounces shredded swiss cheese (1 cup)

1 1/2 cups milk

1/2 cup flour

4 eggs, lightly beaten

1/4 cup finely chopped onion

2 tablespoons butter, melted

1/2 teaspoon salt

  1. Cook bacon in a large, deep skillet over medium-high heat, turning occasionally, until evenly browned. Drain on paper towels, crumble, and set aside.

  2. Preheat oven to 350°. Lightly grease a 9-inch pie plate.

  3. Line bottom of plate with cheese and crumbled bacon. Whisk together milk and flour in a large bowl, then whisk in eggs, onion, butter, and salt until smooth; pour into plate.

  4. Bake until set, 35 to 40 minutes. Cut into 6 slices and serve hot or cold.

Options: Try different cheeses. Add broccoli, sun-dried tomatoes.

Tip: Broil for a few minutes after cooking for a crispy top.
